Serving 400 covers flawlessly
Since 2017, The Harbour Club Amsterdam Oost has been working with DISH’s digital kitchen management. Restaurant manager Joël Oostdam explains: “We chose DISH Kitchen Manager because on a Friday or Saturday evening we serve more than 400 covers. When we were working with separate tickets from kitchen printers, we would lose tickets. It also happened that guests, when a different and nicer table became available, wanted to switch tables. With DISH Kitchen Manager, processes adjust effortlessly without losing tickets. The system brings order to the kitchen as well as to the service.”
Useful features
Melchor Soto Fernandez has been Chef de Cuisine since 2018 and is very positive about the digital kitchen management: “In the past we used tickets. Sometimes the service staff lost tickets, and I, as chef, would occasionally lose tickets too. Now that we work with the digital system, we can view or retrieve everything we need on the digital touchscreens. We also no longer have greasy fingerprints on tickets, so everything is readable and clear. By opening the tab on the digital screen, I can also see a summary of all dishes currently in progress. If an ingredient is out of stock or a dish needs to be prepared more frequently, I can always indicate that.”
Better communication in the kitchen
“DISH Kitchen Manager means better communication in the kitchen,” says Melchor. “As a chef, I can see what each member of my team is working on, and therefore when someone starts or finishes a dish. When a dish does not need to go to a table immediately, we can put it on hold and indicate when it should be prepared. This digital kitchen system, with its useful features, represents progress for everyone.”
Future plans
At The Harbour Club, after opening their newest location in The Hague, they continue to dream about further expansion. Joël says, “The dream for the future is that we continue to expand, and preferably abroad. Think of the Middle East, Asia, or maybe even across the Pacific. That would be the ultimate goal.”
