Don’t want to sit down right away or just want to enjoy a drink? The cozy wine bar, where you can order no fewer than 18 different types of wine (as well as gins and aperitivos) with delicious bites, is perfect for you. BIG entrepreneurship

René Bogaart, owner of hospitality group BIG Horeca, is the driving force behind the Pavarotti concept. The charismatic entrepreneur has an impressive track record and was named the Most Remarkable Hospitality Entrepreneur of South Holland in 2019, also finishing in the top 3 in the Netherlands. After ventures such as Volle Maan, Gina, and Clooney, he developed a concept with Pavarotti that calls for opening multiple locations. “With our attractively priced, freshly prepared authentic Italian dishes, the many seats, and high turnover rate, we tap into the trend of dining out more often. The right location is, of course, crucial. That’s why we are always looking for something special, a unique location,” says Alexandra Duijsens, René Bogaart’s right hand.

In Delft, Pavarotti is housed in the old station building. “It’s a monumental building, so we preserved certain elements in their original state. This makes it even more special. For example, the old ticket counters now serve as the kitchen’s pickup point. Many people who come to eat say, ‘wow, this used to be the platform!’ They really recognize it, and it’s great to hear their enthusiasm.

New ways of service

Pavarotti Delft now has its own DISH Ordering Website with delivery service and a convenient self-order kiosk in the restaurant. “Thanks to the ordering site, everyone can easily order from home or on the go and have the pizzas, pastas, or lunch specials delivered. Because every order automatically appears in the POS and on kitchen screens, we save a lot of handling and therefore time.

And of course we don’t have to pay any commission on these website orders. That makes it even more attractive! More and more people are finding the ordering site. The promotion 'order with no delivery fee,' which we ran through social media, was a huge success. That way, we were able to create immediate reach and impact."

“The order kiosk in the restaurant is for our To Go guests. In this way, they can order and pay and pick up their pizza or pasta within 10 minutes; it works super efficiently. And because the kiosk speaks for itself, fewer staff members are needed. Of course, someone is available to help guests if desired, but in practice, this actually turns out not to be necessary.

The big advantage of the DISH Ordering Website is that we can easily link promotions to it. For example, if we want to give something away for free on orders over 50 euros, we can set that up ourselves. The revenue we generate through the ordering site and kiosk is also visible in the same dashboard as the POS and handhelds. Everything goes directly to headquarters, giving us maximum insight. And these service methods fit perfectly with our cashless principle."
