The rising star from Africa

African teff is especially high in protein and already a big star on the celebrity horizon. The smallest grain in the world has been cultivated for 5,000 years in Ethiopia and is increasingly being used to make gluten-free baked goods. Teff is rich in silicic acid and minerals such as iron, which makes it an ideal ingredient for vegan dishes.
